Is there a way to transfer a finished track from the watch in order to open it (gpx fike) with a hiking app like Oruxmap, OsmAnd... when you have no mobile network ?

Download the Garmin Explore app. This is the only app that works completely offline. From there you can export.
Explore needs some training time, but then it is very flexible to use. I use it regularly.
The simplest way to export tracks as GPX files is from Garmin Connect Web.
I had understood the question in the title as if a mobile solution for on the road is sought here, and this should also be usable offline.

Yes, that's correct, for offline access to the GPX files, Explore is the only solution, apart perhaps from some 3rd party tools for converting FIT files to GPX, but that would be likely even less user-friendly than Explore.

GC Web works just fine on a phone too. Internet connection is still needed, though.
