Fenix 7 battery management chip

As I know most of devices do not follow LION battery recommendations of 80% and I think it's because battery will last enough without doing it. You charge phone every day and battery is still good after 1 year, here you will do it let say once a week, so it should last without any problems much much longer. 

It has at least a li ion cutoff at about 3.2v under load... Just like your phone or nearly all electrical products using batteries like these... Otherwise it would be destroyed the first time it discharged...

 it has to my knowledge a lithium ion safety cutoff, to stop it draining below about 2.8v ish...0% on the watch is not 0% on the battery of course the software protects the battery, otherwise it would drain to actual 0% and its capacity to charge destroyed...or am I missing something?

That is absolutely correct. But that is the case for every device with a Li-Ion battery. The 2.5 to 2.8V (depending on the battery type slightly different) are the 0%.
Anything less would be a deep discharge. Then every Li-Ion battery is dead.
The shutdown at 2.8V can still not prevent self-discharge below this voltage.

Charging a Li-ion battery to 100% and discharging it to 0% does not directly destroy it, but accelerates the decomposition of the chemistry in long term.  The battery feels most comfortable at about 60%. So if you want to do something good for the battery :
-keep the charge between 20-80%.
-Do not leave it fully charged all night on the charger.
- only use it in the temperature range indicated in the data sheet.

-Store the device at 40-60% when not in use and recharge every three months.

If you keep this in mind, you should enjoy the battery for a long time, and it will probably survive LONGER than the 500 charge cycles.
How often you plug the device into the charger in between does not matter at all.

During charging the app can send a notification to the phone when the battery of the watch reaches a certain level

500 cycles, even if i'd let my epix to go to 0% and charge full to 100%, every 5-10days (may avarage is about 8days with my activities).

that gives me 500*5=2500/365=6.85years - i'm pretty sure i might change my watch before that time. :)

You, and the majority of users certainly will. But I know some people who still train with their fenix 3(HR) from 2016 and love this watch. And the fact that their 3HR still works today is certainly partly due to the fact that the battery has been well treated.
