Is there a way to make watch light on for a longer time rather default during activity at night? E.g. making some bike interval sessions in the darkness it's very uncomfortable to press light on button several time to check remaining distance/time.

Settings>System>Backlight>During Activity>Timeout -> No Timeout or you can change the backlight for just the activity you are using. You could turn on touch too so you don't have to press a button.…

Your only option is to change the backlight or touch for all activities for when you ride at night. In that respect, it might be better to have a longer timeout and trigger by touch depending on what other activities you are doing.
You can have the backlight with wrist gesture. In backlight settings go to during activity, wrist gesture and select after sunset. You can do the same with the keys & touch.

Thanks for replies! Yes, watch is mounted on the bars. Seems the best option is to set longer timeout of the backlight and touch the watch to get it on.
