In your Garmin Mobile Connect app, go to settings -> Notifications -> App Notifications -> All applications and select which apps can send notifications to your watch.

On iOS you have to control notifications through the system settings. If you don't want an app to notify to your watch you have to disable the Notification Center option.
It seems to me that it was possible to manage the list of app notifications in the previous Garmin Connect version
Back then you likely had an android mobile and now you've switched to iPhone. Apple only allow the Apple watch to filter individual app notifications, because that's the kind of company they are.
i was able to filter app notif using a Xiaomi MiBand and my iPhone, using Xiaomi App !
Apple also allows you to filter apps that send notifications to your garmin. Just follow these instructions: support.garmin.com/.../
with Apple, you cannot disable notification for Garmin Connect (Watch) by app.

you don't have to disable notifications for an app completely, Garmin only reacts to notification center notifications. If you disable that, you'll still get the notifications as a banner and on the lockscreen on your phone. It's hardly ideal, I admit, but it's Apple's walled garden and you can only go around that by buying an Android phone (or an Apple watch).
LE. Sure, Xiaomi did it, but it's possible that Garmin has a different deal with Apple or it follows stricter rules than Xiaomi.

I don't tell, I just say it's a possibility. I have no idea why Xiaomi was able to (back then when I used Xiaomi I also had a Xiaomi phone) whereas Garmin can't do it. But it's got to be something since Garmin offers this feature on Android but not on iOS. It's the same with notification interactions, you can reply to them on Android but can only dismiss them on iOS. Having been a Garmin user for six years and counting, I don't think Garmin is interested in feature requests and user feedback. It barely keeps up with fixing software bugs lately, as it grew the number of devices and introduced a lot of new features.
