I am using using a fenix 7s with the stryd workout app. If I pause my run while I am doing a run the workout is auto saves afrer just 1-2 min.. Its so how do I changed that?

Maybe check the "Power Save Timeout" setting in the activity's settings.
"Normal" (which is the default setting) performs an auto-save after being paused for 5 minutes.
"Extended" does the auto-save after 25 minutes.
Unfortunately, there's no way to turn off the auto-save altogether, but 25 minutes is enough of a delay for most scenarios.
If yours is really auto-saving after 1-2 minutes (not 5), then maybe there's something else wrong, but I'd check that setting first. If that doesn't fix it, then perhaps there's a glitch in the Stryd workout app, in which case I'd contact Stryd.

My "normal" auto-save is around an hour. I have no idea how long "extended" is.

This is not an auto save setting. This setting only affects the amount of time before the watch returns to the watch face when an activity has been selected but not started.
When paused the watch will usually auto save after 15 mins (possibly more) unless the activity is resumed. If the OP is certain Save is not being pressed accidentally instead of Resume then I’d be looking to the Stryd app causing the problem. Remove it and run, pause, and see if the same thing happens.
It is a stryd app problem i think. Having the same, just with stryd app. Just did my long run and stretched 1-2 minutes within. Result is i now have 2 runs for my longrun. 100% didn´t touched a button other than initial "pause"
You can stop the activity, scroll down and select resume later . You back 24h later & can resume your activity
