I have the Epix 2 and have the same problem. I did some investigation and figured it is due to missing DEM data on the watch.
My fenix 6s pro has 'Worldwide DEM Basemap, NR' in the Hike Settings -> Map -> Configure maps' and that is missing on the Epix 2.
Looks like it's the same issue with the Fenix 7.

On my felix 6s pro, I turned that map off and get the same flat elevation profile. Once I turn it back on, I see the profile properly.
Also, if I don't have my watch connected to phone with data connection and try to calibrate using DEM, I get 'No DEM elevation available' message. So I'm pretty sure it's the missing DEM data.
Hopefully a fix is coming for this soon.

My altimeter calibration using DEM also succeeded without issue. But like you, I don't see a DEM map in my list of maps on the watch.

Yesterday i sent them a little fit file, but it's so easy to reproduce, i don't know why they need it... However, i would like to copy Delta solar's DEM map to Fenix 7X in order to see if it works, what's the DEM map name?

I also have a Garmin Topo Germany V9 with DEM data installed. Same issue. I think, it doesn’t use the DEM data perhaps not for calculating a navigation. Sent them also informations. Should be easy to reproduce for them.
The strange thing is that Climb Pro works (as for Double Elevation Plot Bug)!
And it is working for DEM altimeter calibration, too. Therefore, I think an issue (only?) for using DEM in a navigation calculation…
