... how do you open a discussion with too many replies to the last reply, like it was possible before?

open discussion and use the three buttons ?

If you click on the bit that has “Latest 33 minutes ago” or similar, it takes you to the latest post.

I'm hoping this is one of the actions still to come. That and a thread somewhere where we can discuss the forums.
