I have an Instinct watch that I take outdoors a lot. I was on the road again last week, walked a lot of steps, and my watch doesn't have these values in it.

Probably because the watch crashed and rebooted just when writing to the file holding the steps, which led to its corruption. Unfortunately there is not much you can do about it, apart from syncing frequently, and reporting it t the Support.
Try the following troubleshooting procedures if your watch is not counting any steps despite regular arm movement.
- Make sure Activity Tracking is activated: Make sure your watch has Activity Tracking turned on. Your watch will not track your steps if it is off. What is the Activity Tracking Feature on My Garmin Watch? provides more details.
- Make Sure Your Software Is Current: You might need to upgrade the watch software if Activity Tracking is enabled but the watch is still not counting any steps. Installing the Latest Software On Your Fitness Device for additional details. getaway shootout
- Verify the fit of your watch: Accurate step counting can be improved by wearing the watch properly. The step count will probably be inaccurate if your watch is loosely strapped and slips up and down your arm.
- Start the Watch again: By turning the watch off and back on, you can restart it. Use the charging cord to connect your watch to a USB port if it doesn't have an off button. This is the equivalent of restarting your watch.
