I may have never noticed before but my instinct records sleep when it's in charge. I think this a no sense logic that garmin should be putting in.

If you never wear your watch at night to record sleep, it is a normal behavior. If your wear your watch at night and record sleep metrics and sync them, but then when you go charge your watch it records…
Your Instinct mistakenly saw you as wearing it during the charge session when it should not have but it also explains the rest of the story.

It might be "by design" but the case is slightly different from what you explained. I put it in charge before sleep time before 9 pm. I pick up the watch after sleep time 11pm and wear it. I wake up pretty late in the day 9 am. But the watch records it as 9 pm to 6 am my predefined sleep time.
