How comes that my watch always shows less climbing meters than the organisation's descripton, e.g. last Saturday, cycling tour with 1960 climbing meters, my Instinct only shows 1385??

Your watch uses a barometric altimeter. Clothes covering the altimeter port, sweat entering the port, and weather pressure systems will impact the elevation reading of your watch.
The best course of action is to manually calibrate your altimeter by inputting the current elevation just before an important outdoor activity.
