It may be my swimming style, but my stroke is consistently breaststroke but the watch identifies freestyle and backstroke frequently (about 5-10% of lengths swam).

Your watch accelerometer is listening to all movement to detect the correct stroke being used. For it to work well, it is looking closely at every minute movement. What will sometimes work well to improve stroke recognition is to wear your watch on your other wrist when you swim.
