2. enable every second track
3. set the GPS + Glonass setting (not just GPS)

Since you did not tell which part is missing, it is hard to comment. If the beginning is missing, then you either forgot to start the activity, or started to ride before the satellites were acquired. If the end is missing, then you either stopped the activity accidentally, or there was no more memory space (think to clean up the folder //GARMIN/Activities time to time), or the watch entered the power-saving mode due to low power. If middle sections are missing, or there are frequent drop-outs in the pace graph, then there might have been bad GPS signal.
You also did not tell why you think you rode 30+ miles. Did you use another device for measuring the distance? Are you sure it was more accurate?
