I'm looking to set up my Garmin so it shows just the compass bearing And distance to selected waypoint. Like on the attached picture. I find the map very inconvenient for navigating to single waypoints, Can anyone advise me how to do it?

Yes, there is - long press the ABC button (left bottom) and you get the compass and altimeter screen. Scroll up or down for several different screens, and chose the one you prefer.

The photo in the opening post does not show a NUMERIC bearing. It shows an arrow on the watch face. A compass has 360 degrees. A numeric East bearing, for example, would read "90". Is the instinct capable of showing a numeric bearing to the next waypoint or destination, and if so, how does one get it to display?

That's exactly what was requested in the opening post. However, if you do it in the way I suggested, you'll have both the arrow, and the digital bearing (see the sreenshot below). If you do not want the arrow at all, select a different layout and put the bearing to any other postion than the ring-field. It will be then digitial only.

In the same way as any other custom data values - simply select it from the list of available values. These ones are in the Navigation category.
