No idea why your HRM doesn't work.
Pairing with your iPhone is done through the Garmin Connect Mobile App - Bluetooth address has nothing to do with pairing. Are you using the Connect Mobile App? Select "Add Device" after putting your Instinct in Bluetooth discover mode and you should be fine.
