What happened to the 3-minute HR stress test?

there's the usual 3-minute "HRV Stress" test.

but there used to be another 3-minute test that downloaded the info to connect. but its no longer there.

It's still there. Run button, select HRV Stress

there was another option that recorded the data and downloaded to connect

Are you saying that HRV Stress does not do what you want or are you saying that there was another way?
