I've always hesitated to click that 'update maps' button in Express. It looks like it's screwed things up for you.
Can you check that you still have a routable map installed and enabled?
Go to: (start with long press on 'menu' button)
Settings->Activities and apps->Navigate>Navigate settings->map->configure maps
and check that maybe Garmin cycling map is turned on. (It's routable) If you can't find it, try enabling and all of the maps to see if that helps.
Otherwise, I'd conclude that somehow you've lost your maps.
BTW, a good power off/on could help..
also check if you have more than one routable map enabled. You must have only one at once because the watch does not know which to use.
Interesting, I must test this further because I typically have the pre-installed cycling map (which I believe is routable) plus an OSM map (which states it is routable) both on at the same time. As far as I know it doesn't cause a problem but I see your point. How does it choose which to use?
And an interesting observation. During a test I turned off all maps in Navigate so had no maps 'on' and I tried the
navigate->round-trip
thing where it makes a route for you based on distance and starting direction. It still managed to come up with 3 routes for me to run despite having turned off the maps. Maybe 'turned off' isn't really completely off, maybe just 'do not display'
That's interesting. I didn't know (never used) the watch would give a round-trip even with the maps disabled...
Garmin manual lack a tons of details ...
Would be nice someone from Garmin to elaborate on this matter.

Ok, so for some reason I only have two maps on the watch, worldwide Dem basemap, NR, and Topo US 100k v6. Does this tell you anything about the issue?
I don't think that either of those is routable. Not sure about the Topo US because I am in Australia and don't have it but the Topo Aus and NZ that I got with my watch isn't routable. However, the watch came with a cycling map that is routable so maybe you are missing something like that somehow?
You can get routable maps from Open Street Maps (OSM) and install them if you can't get the issue sorted out in a conventional way (i.e. get Garmin Express to fix its screwup)

Once the .img file is copied to /Garmin/ directory on the watch, (maybe you need to turn off then on the watch, not sure) it ought to be seen in
Settings->Activities and apps->Navigate>Navigate settings->map->configure maps
and you ought to be able to select it.
