Now that I have Galileo - is it recommended to use GPS + Galileo for most runs/cycles? Will it impact the battery a bit more? Currently I am happy with GPS accuracy and pace so long as there aren't too many trees or big buildings around me. My local lake run however has a lot of tree coverage and the pace calculation suffers badly so I would be good to have higher accuracy.

No, unless you are not satisfied with accuracy and you think that galileo might help. Additionally, Galileo isn't fully deployed yet and it's availability - and thus effectiveness - is limited.
The Galileo programme is currently in the deployment phase. The exploitation phase, however, is expected to commence in the second half of 2016 with the declaration of Galileo Initial Services. At this time, some Galileo services will be available for use. Galileo satellites will continue to be added to the system, with each additional satellite allowing for the provision of additional Galileo services. A fully operational system will be available in 2020.
Not all satellites have launched yet, and so the coverage is not complete. This means that at times in certain areas galileo availability can be limited. Go to wikipedia for more details.
2. Battery impact - from where info that it will have a significantly impact?
Can't remember now. Generally any additional GNSS enabled will cost more power. In case of GLONASS it's about 20% more, so I'd suspect that Galileo will be about the same. Whether it's significant is of course relative.
