I am planning a sledge hammer session and track sprints session (2 mins hammer then 400m sprint) x10. What activity or interval mode can I use for this?

In general, you probably want to use Garmin Connect to create a specific structured "Workout", which you can then send to the watch, and access under Training > My Workouts when you start the relevant Activity on the watch.
