Please can anyone advise if it is ok to use the power Supply/charger from my Fenix 2 or Edge 805 to charge the Fenix 5X. I do not generally travel around with a laptop and so charging on the move is important.

Yes, any USB charger will do. There is often confusion about the current rating of the chargers. The current rating is the capacity of the charger. The charging circuit on the phone will determine the amount of current it draws. So it's ok if the current rating of the charger is higher than what the watch charger has, as long as the output voltage is 5Vdc.
As an aside, there are QuickCharge phones and chargers that provide more than 5V through a USB charging cable. That only works when the charger detects a QuickCharge device. If it doesn't detect one, it'll charge at the normal 5V.
