Does anyone know how to select an activity after choosing a to do a saved course? On the Fenix 3, the watch prompts you to select an activity after choosing to do a course. This doesn't seem to happen on the 5x.

Yes it is annoying that it doesn't work the same - what does work is to pick the activity first and then, before you start it, choose to navigate, either a course or to a POI.
I had the same initial confusion coming from the F3. On the F5 series you open the activity app first, then enter the menu in that app and go to Navigation and select a course to use.
Comfortable solution: "navigation" to give as hotkey
Then
1. we are starting the activity (e.g. walk application)
2. if necessary hotkey "navigation" ( -> Courses e.g.)
