What stroke do you swim - if breaststroke then that is the worst for accuracy as the watch is under the water most of the time. What I have also found makes a huge difference is giving the watch plenty of time to acquire satellites before starting the activity. Open the swimming activity and give it 3 or 4 minutes after you get green GPS indicator - all of this will help but not eliminate problems.
My experience is the same. You need to let the watch to fully acquire satellites connection before starting your swimming. I usually let it get 5-8 mins of time to do that (while I am getting ready to jump in the water). It looks OK afterwards when checking on connect but it is definately not perfect.
I tend to take one of my other gps devices with me and store it in the Swim buoy - Not an ideal situation but it works for accuracy.
