From your GC activity links, the watch seems to be recording the right elevation data as the elevation plots in GC look plausible. Climb Pro only works if you are following a Course (with software 5.10 which you are using; the latest beta extends Climb Pro to work with a route calculated on the watch). So unless you were navigating a course and the course sent to the watch had elevation data, then Climb Pro won’t work.
I can’t see the screen shots you refer to in you post, so it’s a bit difficult to comment on your elevation plot issues at the moment.
Sorry about my post, but the forum software was not able to include any of my screenshots without giving errors. I'm going to create a new thread with more details. The GC links showed all the correct data, it's the elevation profile and other data that was incorrect via the watch that's the issue which I'll cover in the new thread.
