I know I can read messages during an activity if I respond to the message alert, but if I am doing a hard lap or something and let it go, is there a way to check my messages a few minutes later without pausing my activity?
Yes. Make sure one of the Hot Keys is configured to be “Widgets”. By default on the 5+ series the Back button is set as the Widgets Hot Key (so should still be there if you haven’t changed Hot Keys). When you have an activity running, a long press of the Widgets Hot Key will take you to the watchface screen (don’t worry, your activity is still running). Then use Up and Down to scroll to the Notifications widget, view your message notifications as required, then use the Back key to go back to the activity (just don’t click too many times as that could initiate a manual lap).
