Course screen

I'm not aware of a way to set the map screen as the first screen and set the zoom settings globally in response to navigating a course. 

What you can do, however, is setup an activity to do what you want.  Go into the Activities settings of interest (hike, run, etc.).  Enable the map data page (if it's not already enabled) and move it to the top of the data page list.  Next, go the map settings (still within the activity settings) and turn off the autozoom.  

The next time you start your activity, the map should be on the first data page.  You can then set the zoom level to you desired setting.
