Sleep Tracker shows the wrong start of sleep time about 25% of the time. I.e, if I went to bed at 11 it might say 12;30 AM. It seems accurate when I get up in the morning.

I would make sure that the sleep/wake times set in the Garmin Connect application on your phone are set close within the times you typically go to bed. If the time is incorrect or set later it will cause the watch to not track properly.
The Approach S20 utilizes the most basic form of sleep tracking, which begins tracking when movement decreases significantly for a consistent period during the sleep/wake times you have set for your account in the Garmin Connect app the watch is synced to.
