What do "Trip Recording and its two options" mean?

Trip Recording sets a trip recording option to control the totals displayed in the trip computer. Choose between During Activity (default) or Always. For more information on recording settings, see Track Settings…

Note that not all data fields that you can use in the trip computer adhere to this setting, even though the manual implies so. For example Total Ascent will change value even though activity recording…
