I'd like to know if the holes map is different from the S62 watch and the Phone apps (both Garmin). I see the new layouts (holes were modified) in the phone apps but not in the S62 watch. Kind of annoying.

The maps are preloaded for the format displayed on the watch, and the graphics that are displayed on the app are separate in how they look from what appears on the device.
Having the watch paired within the Garmin Golf app during the round will not result in the course graphics displaying differently on the S62, as they are preset to appear the way you are seeing them on the watch.
The Approach S70 for example has a little bit more detail added in the course graphics for the maps preloaded on the device which include course features like biomes (trees)...but still displays differently than how the Garmin Golf app displays the map details in the graphics. It's important to note the maps on the device vs the Golf app are different.
If you are only seeing the front, middle, and back distances displaying on your Approach S62 during rounds (and not displaying the hole view showing the layout of the course map next to the distances) then big numbers mode is enabled in the Golf Settings on your S62. To change this setting, open Settings > Golf Settings > Big numbers > Switch off.
