Approach S42 will not pair to iPhone

New S42, updated to software version 6.0.0. Garmin Express Mac s/w v7.8.0.0 on macOS 10.14.6. Golf iOS app 2.0.2.5 on iPhone 12 running iOS 14.7.1

S42, fully updated via Garmin Express. User logged into Garmin Connect web account OK on Mac and iPhone.

S42 shows up in iOS Golf app, and starts to pair but always returns a message: "We're having problems talking to the Garmin Connect server. Try Again." Odd as the Mac and the IOS app are both connected to the same server.

Having updated all software - as above - and restored phone, watch and Mac I still get the same unhelpful error.

The support documents don't cover this so are no help at all.

How do I fix this?
