How can I transfer/sync data for the day's swim workout from the app to the watch?

On two separate occasions I finished my swim workouts and saved them, only to have the dreaded triangle appear on my watch face. I thought I lost everything, but once I was able to sync with my iPhone the workout/yards appeared on the app.

Since you mentioned that this issue has occurred on two separate occasions, I suggest reaching out to the support team. This forum is for software developers using the FIT SDK in their applications, so you probably will not get an answer here (or at least not one that is on-topic).
