The golf course maps are not actually installed to the watch, and the nearest courses to the user at the time the round is started are pulled to the device from the sync in Garmin Connect mobile and the Garmin Golf app.
Any courses displaying on the device are either nearby or from a previous satellite acquisition from the watch still displaying on the watch. Starting a round with a connection to the Garmin Connect and Garmin Golf apps while outside should result in different courses becoming displayed as nearest to your location at the time the golf activity is started.
