In Garmin Connect you can do a full edit on the activity and change the totals. As for trying to edit the .fit and put some data points in there to make your graphs look reasonable you'd need something like the fitfilerepair tool.
Did you figure out what happened to the sensors? RF interferrence from a video camera or even a phone?
