Edge 510 - Post Update it goes wonkers - Please Help

Hello,

I just got my Edge 510 on Friday and had it installed at the bike shop.

Saturday: After reading the Quick Start guide, it suggested I go for a ride, before doing anything else. The system couldn't find the cadence/speed sensor from the night before - I figured I was doing something wrong, so I just went with it. I went for a couple of hours about 25 miles though the hills. Everything seemed to work great. The readings felt accurate - speed, altitude, etc. Everything on by default with just the 510.

Then I got home plug in the unit and uploaded my stuff. It went though 3 updates.

Sunday: I activated the Heart Rate monitor and was able to pair the speed / cadence sensor as well. I decided to go the same route as I did so I could compare. First off, the speed sensor was WAY off, the entire time. I was jumping from 3mph to 10mph and back going up hill. There were some sections where it seemed to work well and other times it just seemed to be messed up. I had wondered if it was a satellite locking thing, sometimes GPS speed can be a bit off, but Saturday it worked well, with the Speed Sensor enabled, it was all messed up. Altitude too was messed up. Saturday, I did 2600 feet of climbing, Sunday over 7600 - for the same route. Calories burned about 2000 on Sat and 1000 on Sun.

Now, I don't know if it was the update, or because I had the ANT+ sensors attached. Where do I begin to try and trouble shoot this? Saturday's readings were more accurate - I've done these routes before - as I would really like to get this working before customizing all the screens.
