Editing a mistake

Out on a ride I paused the workout on my edge 800 at the bottom of a climb and forgot to restart the 800 until around 5 miles down the road! Is there anyway to edit the file or retrieve this data during the paused time?

No. If you paused the device, then the 800 was not recording trackpoints. If there are no trackpooints, then there is nothing to retrieve.
