How is speed calculated on timing charts

This may sound like a silly question but I was recently stopped for about 2.5 hours and the chart did not show the speed going to zero.

I have noticed this before and it has just been chipping away in my head.

Some of it depends on whether or not you have auto pause enabled on your device. Also, what did you do during your long stop -- turn the unit off? Press the start/stop button to stop the timer?

I just looked at your activity. It looks like you were stopped from about 3:30 to 6:00. That's pretty evident from the graphs. It looks like there was a low speed recorded during this time. This is probably just a smoothed average of the low apparent speed that happens even when you are not moving. This is normal, and is caused by the inaccuracy of GPS knowing your exact position.
