I did not see e-bike mentioned in the OP. An e-bike is an electric bike, not an exercise bike. Exercise bike, as far as I know, is an indoor bike.
I see no reason why it would need to be logged as something else than the already existing Indoor Cycling activity

I am currently using indoor cycling under cycling, but it is not exactly the same thing.
Just curious - what is the difference between an indoor bike and an exercise bike? I always thought it was the same. And which of the stats you need are missing in the Indoor Cycling activity? Or what is the reason you need it as a separate activity? You could also use for example "Cardio", if you do not want the activities logged in the Cycling category.

Both setups had a Garmin Speed sensor and a Cadence sensor mounted on them. I never felt the need to get anything to measure the pedal power. I used the Garmin's Indoor Cycling app on my Vivoactive 4 to record the activities. No difference. In fact, if you calibrate the speed sensor correctly you can come pretty close to real world. I now only use the excerise bike to record Tacx rides and have sold the trainer setup.
