Do the CO and OR ship with a protective screen display?

We do not have protective screens for our devices. You may want to look for some third party screens. You will want to make sure it is flexible and not rigid however if you are looking at an Oregon as that could effect the touch screen.

I have not used one personally. Perhaps some of the users here could share their opinion on any they have tried.

This might be something for Garmin to consider including as part of the standard equipment for all of their units.
