I often include plyometric exercises (drop jump, depth jump, etc.) in my workout routine. It seems that they are not present in the Garmin exercise list. Would it be possible to integrate them?

If you enter "plyo" you should see several options, including simply Plyo.
And for "jump" there are many. If you desire something more specific, you can suggest it on the Garmin Ideas page.
