Is there any way to build a report with only specific gear (i.e. a specific bike) or to exclude certain gear from reports?

Currently the only way where you can do some kind of report based on the gear is on the page https://connect.garmin.com/modern/gear where you can click the link telling "NNN activities" at the concerned gear. A popup window appears listing all activities with given gear.
Other than that, you can also use the Progress Summary reports, where you can get some stats selectively by the subcategory, so you can separate plain cycling, road cycling, indoor cycling, virtual cycling, etc. For example:

Looks like I'll need to start identifying my rides using the subcategories now
