For the R-R data, a Connect IQ app would be needed. It is not included by default. HRV can be optionally included on some watch models.

I'm going to be more accurate.
I would like recover a Text or ASCII file, I could load on EXCEL to make calculation. That for Heart Rate by second and R-R intervals. I can't believe that my Epix is not abale to measure R-R alone because it gives me my HRV.

There is a number of file formats that you can use for exporting the activities. GPX and TCX files are both XML-conform files that you can open with Excel directly. The "Original" is a zipped FIT file that you can convert to a CSV format (readable by Excel), with the help of the FitToCsv tool available on Garmin's website.

Indeed, I didnt find the way to do it with the garmin online support. My watch is an Epix Gen 2

Still the same answer - export the activity in one of the available formats and open it in Excel. FIT file needs to be converted to CSV first in order to be compatible with Excel. GPX and TCX files can be opened directly with Excel. For the R-R you need a Connect IQ Data Field app on your Epix, storing the R-R data into the activity file
