Floors climbed not adding onto expedition challenges.

You need a device with a barometric altimeter for the Climb Expedition challenges. Vivoactive 3 does not have one.

I stand corrected, indeed, and sorry for the disinformation. I have checked the Vivoactive 3 specs before, but somehow I managed to overseen it. In that case the barometric altimeter needs to be checked. I recommend to 3193841 to open the altimeter widget, and climbing a floor or two, to see whether the elevation value changes. If not, then there are some troubleshooting tips at
