How do I turn off moving time?

Hello.

I recently switched from Polar to Garmin and found the transition a little bumpy to say the least.

Especially with how Garmin recorded "Time". More specifically the differentiation of "Moving time", "Total time" and "Elapsed time".

While I can see the benefits of said differentiation, for what I want to do, I am only interested in "time".

For example here is a backcountry skiing recorded a few days ago. 

The time recorded was 21:16. But the recorded "moving time" was a bit less and the "elapsed time" was a lot more.

Only moving time being exported to Apple Health  189kcal...

So despite being in average HR zone 3 and achieving high training effort for over 2 hours, I burned... 189kcal.

I suspect the uphill portion of the backcountry skiing weren't counted for, only the downhill portion was. But as anyone who's skied in the backcountry knows that uphill is the actual work! The elevation data was also way off the mark by the way. 

And this selected data was what got exported to Apple Health.

I use a different app on my iPhone that takes into account my training effort and sleep to suggest training recovery time. You can see how an effort of 21mins/189kcal is going to differ from 2hrs at over lactate threshold effort intensity.

What I really want is simple: record the entire workout regardless of whether I am moving or not. When I press record, I want it to start recording and when I press stop, I want it to stop recording.

Even when I am not moving, active rest (>70% HR) is still a substantial cardiovascular effort that should be accounted for especially when it comes to training recovery time. 

Is there a way to configure a sport profile to NOT calculate total/moving time?
