I'm trying to create a custom strength workout but there isn't an option to add in the number of sets in an exercise, just the reps. Am I missing something or can you only add the total number of reps?

But it's a little annoying to have to enter the exercise multiple times.
Not sure I understand. If you use the Round function, you only enter the exercise once into the round, and in the left upper corner you enter the number of repeats of the round (do not confuse the Round Repeats for the Exercise Repeats!). No need to re-enter the exercise multiple times.
