Currently I cannot create any courses across the UK, I have tried my from my home address and a number of other addresses around the UK but i get a message that just says "not enough data on this particular route"?

This has happened in the past and in most cases only impacts popularity routing in Europe. Assume UK support is aware, but might want to submit a support case using chat or phone call just to be sure - Garmin Connect | Garmin | UK | Support Centre
We fixed this in a server change and this should now be resolved.
