You've never got credit for walking challenges for hiking activities. Walk activities will only count for walking challenges, hike will only count for hiking challenges.
What you've probably experienced is that if you change the activity type between those two it will, until the next activity, count for both challenges. Only a new activity will recalculate the totals for a challenge. Removing activities or changing activity types will not.
Some watches also report hiking activities as walking. I think 920XT do that. What is important is which activity type the activity get in Connect. The name of the activity profile is not always the name of the activity type.
