I'm with the rest of the gardeners it's tough work. And can keep you in shape. Between splittinwood building ray's beds cutting up limbs that are falling out of my giant oaks. Not to mention my properties probably a 1000' or more different from the top to the bottom At the Creek So walking up-and-down hills Can kick your butt even if you're not dragging a big giant limb. But go figure fishing?? Really? And as far as complicating things if a computer program can't add gardening. It's a lot heavier than swimming or even walking on my tread. A lot of people could not could not do it especially on this steep property. Just walking to the mailbox is like going up 4 flights of stairs. But it hasn't been registering as going up any stairs. I called garmin. To see if they could help me set something up on the phone he told me to take it to the Geek Squad? Now that's customer service NOT !! I ALSO ONLY SLEPT 2 HRS but my V 4s says 6. I'll be sending it back. This is a very expensive Piece of equipment that does nothing accurately.
No one is saying that it isn't hard work... but it is work. Not physical exercise. Garmin got fishing but it is a commercial choice since they got fishing equipment.
Why not use "Yard work"? Vivoactive 4 series got that as an activity profile.

Do you work for Garmin? Or is your aversion to adding gardening as an activity because you dislike gardening?
You said it was limited to sports. I hadn't realized that breath work or yoga were sports.
Gardening is by far more physical than fishing. I'm discounting fishing. I just rate it as a relaxing activity like meditation.

It is not necessary to work for Garmin to see that it is impossible to add every existing human activity There are tens of thousands of organized sports alone, not speaking about all other non-sport activities and professions. There is no need to have a separate category or profile for each of them. You can use Cardio for most of them. Or you can create your own profile, calling it Gardening. If you need some special tracking not available in any of the existing profiles, have a look into the Connect IQ store - there are apps for almost everyone.
