What you might try, is to synchronize your data from Garmin to another training platform that have the possibility to define user-specific heartrate zones.
I have no idea whether there exists such a platform…

Possible, but it does not fit the 5 level system Garmin uses. You simply cannot add more zones than there are. It is as if you had a car with 5-speed transmission…
You can't. The system isn't designed for more, or less, than 5.

There are 5 zones by definition (Z1-Warm Up, Z2-Easy, Z3-Aerobic, Z4-Threshold, and Z5-Maximum), and it makes no sense adding more. If the current ranges for individual HR zones do not fit your real HR, just redefine the HR Zone table.

After my effort test (percentages are mines) I would like to manage the following thresolds and no discart anyone
Regenerative (fats) 0-55%
Fat max (fats - fatty acids)56-64%
Light mixed (fats + glucose) 65-71%
Intense Mixed- Lactate Threshold (Glusose + Fats) 72-77%
Anaerobic Threshold - Metabolic Stress (Glusose) 78-90%
VO2Max - PAM / VAM (Glucose) 90-100%

It is as if you had a car with 5-speed transmission and wanted to add a 6th speed to it, just because you prefere 6 speed transmissions. As olni65 writes - use a 3rd party solution. Perhaps Strava or another similar 3rd party offers such functionality.
