At the beginning I was testing different activities and how the watch works in general, and I have a lot of Track Mes and Others. I would like to change them to Walking. Is that possible?

Is that possible?
Yes - click on the label OTHER, under the Activity name, and change it to whatever you like. You can do it on the screen of the concerned activity, too.
If I click on OTHER i only see the following:
When I have activity for Walking I can only change it to Speed Walking or Casual Walking. Hiking for example, doesn't get the ability to change to anything.
Then we have Event Type once I click on the Activity:
Which I'm assuming is something even different.
Also is there a way to delete the Golf/Training from the left navigation?
Perhaps there is a comprehensive guide about the activities? I would like to create some new ones that are tailored to what I'm doing (like dancing)
You can't edit that list. They are in alphabetical order in each main category.
If you got a watch that supports more activity types and you create matching activity types or install apps for the activities there is not much need to touch that list. The activities will be reported with the correct type right away. So, the incentive from Garmin is not really that big.
Actually, there is a way to remove items from the list, but it will be a hack in your web browser so nothing that permanent and will not affect the list in the apps. Google for: user scrips.
You can change the order of everything with a user script. If I would do it I would probably create a new list with just the types I wanted to keep and then replace the old one.
It requires some knowledge in javascript and time, but not impossible.
