Did the issue relating to the assignment of more than one pair of running shoes per run ever get sorted - I sometimes wear trail shoes and other time wear road running shoes and I’d like to track the k’s for each pair

You can can only have it default to one. I do the same as you, rotating several different models of shoes. I don't have any defaults set, I just edit the run for the proper gear afterwards.

Ridiculous that Garmin hasn't fixed this! My husband and I both have more than a dozen running shoes that we use for different runs. But Garmin only has one default setting? That's crazy.
