If you want to be able to subsequently find particular activities by course (or any other keyword), you'll need to have either named the activity in such a way that the keyword is in there, or have manually written it in the notes of the activity record after it has been synced to Garmin Connect.
Selecting a named course from the drop-down menu against the activity record won't help, as far as I'm aware.
