The solution is to pause the training (go to Garmin Coach - then the three dots on the top right, choose "Pause"). Then resume it immediately and the missed training was there!... Hope…
I believe, you do not need to reschedule missed workouts of a coach plan. Simply pause or reschedule the future workouts, and start the missed workout directly on the watch:

Nothing proposed here worked for me. Also changing the Date of the devices did not work (could select reschedule but got an error afterwads).
What worked was to enable alle days and then moving the long rund day into the next week.
A work-around is to recreate the workout in “training and planning”. It lets you create running workouts with warmup, run, and cool down. Go to the three dots at the bottom of the screen and select training and planning. Select workouts then create a workout. I missed a steady state run and recreated it the next day using that feature. That way you stay on track.
Worked for me today. I missed my scheduled workout yesterday, forgot to reschedule it, and today I followed the advice of pausing the plan, restarted it a couple of minutes later, and hey presto - yesterday's workout appeared today - thanks for the tip!
This is possible indeed, but I want to add one remark and that is that the current weekday has to be made part of the available training days. Then after pausing and resuming I got yesterday's training scheduled today and I could run it.
I'm guessing once the next scheduled training day is up the missed training cannot be completed anymore.
I just had to do this today. What you can do is chose Run workout on the workout screen and then press the left center button. Then choose Training. Then scroll down to “Training Calendar” and it will show a number of training events, Today, Tomorrow, Yesterday etc. From there you should be able to “Do Workout”. Much easier than programming my own Pace Drill or whatever I’m supposed to do.
